Makes about 12 oz / 1½ cups dressing
• ½ cup organic olive oil
• ½ cup water
• 3 tablespoons brown rice Vinegar or lemon juice
• 2 sprigs fresh parsley or 1 teaspoon dry parsley
• 1 teaspoon dried dill or 1 fresh sprig of dill
• ¼ small onion
• 4 tablespoons sweet white miso
Blend all ingredients in blender or food processor until creamy smooth. Store in glass jar in refrigerator.
Sweet white miso is a short term miso made with less salt and soybeans and more rice koji. Sweet white miso is a great miso for lighter summer salad dressings, dips, sauces and spreads.
